This Greek Yogurt Marinated Chicken recipe features tender and flavorful chicken thighs marinated in a tangy yogurt-based mixture infused with fresh dill, garlic, lemon, and aromatic spices. Grilled to perfection, this dish offers a juicy, smoky, and refreshing meal perfect for any occasion.

Ingredients

Chicken

  • 8 to 10 boneless skinless chicken thighs

Marinade

  • 1 cup Greek yogurt (plain, full-fat)
  • 3 to 4 sprigs fresh dill
  • 1 shallot, minced
  • 3 tablespoons minced garlic
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry with a paper towel to remove any excess moisture. This helps the marinade adhere better and ensures even cooking. Set the chicken aside once done.
  2. Make the Marinade and Marinate: In a mixing bowl, combine the Greek yogurt, fresh dill, minced shallot, minced garlic, lemon juice, lemon zest, salt, pepper, paprika, and dried oregano. Mix thoroughly to create a smooth marinade. Add the chicken thighs to the bowl and toss to coat each piece evenly. Cover the bowl and refrigerate the chicken for at least 1 hour, or ideally overnight to maximize flavor absorption.
  3. Preheat the Grill: Heat your grill to a medium-high temperature, around 400°F (204°C), to ensure the chicken cooks properly and develops a nice charred crust.
  4. Grill the Chicken: Place the marinated chicken thighs on the grill, smooth side down. Discard any leftover marinade in the bowl to avoid flare-ups. Grill the chicken on direct heat for 8 to 10 minutes total, flipping once halfway through the cooking time. Keep the grill lid closed between flips to maintain the temperature and achieve even cooking.
  5. Rest and Serve: Remove the chicken thighs from the grill and let them rest for at least 5 minutes, tented with foil if possible. This resting period allows the juices to redistribute throughout the meat, resulting in a juicier and more flavorful bite. Serve warm.

Notes

  • For best results, marinate the chicken overnight to enhance the depth of flavor and tenderness.
  • If you do not have a grill, you can cook the chicken under a broiler or in a cast-iron skillet on the stovetop at medium-high heat, ensuring similar cooking times and flipping halfway through.
  • Make sure to discard any leftover marinade to prevent cross-contamination and flare-ups on the grill.
  • Use full-fat Greek yogurt for the creamiest texture and richest flavor.
  • Adjust the amount of garlic and herbs based on personal preference.
