Instructions

  1. Make the burger patties: In a medium bowl, combine the ground chicken, diced red onion, minced garlic, chopped sun-dried tomatoes, roughly chopped baby spinach, chopped fresh dill, dried oregano, kosher salt, and ground black pepper. Use your hands to gently mix everything together until all ingredients are evenly distributed. Divide the mixture into 4 equal portions and shape each into a large patty.
  2. Cook the patties: Heat the extra virgin olive oil in a large skillet over medium heat. Once hot, add the chicken patties and cook for about 5 minutes on each side, or until they turn golden brown and are fully cooked through (internal temperature should reach 165°F/74°C). Alternatively, you can grill the patties if desired for a smoky flavor.
  3. Assemble the chicken burgers: Serve the cooked patties plain or assemble them into burgers by layering each patty on butter lettuce leaves. Top with tzatziki sauce, crumbled feta cheese, sliced onion, sliced tomato, and sliced avocado according to your preference. Enjoy immediately while warm.
