Delightfully sweet and tender cinnamon sugar blondies with a buttery base and a crisp cinnamon sugar topping, baked to golden perfection. Perfect for a cozy dessert or a sweet snack any time of day.

Ingredients

Blondie Base

  • 1/2 cup butter (melted)
  • 1 cup brown sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • Pinch of salt

Cinnamon Sugar Topping

  • 5 teaspoons sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking dish with parchment paper to prevent sticking and make removal easier.
  2. Mix Butter and Sugar: In a medium mixing bowl, combine the melted butter and brown sugar, stirring until the mixture is smooth and uniform.
  3. Add Egg and Vanilla: Stir the beaten egg and vanilla extract into the butter and sugar mixture until fully incorporated.
  4. Incorporate Dry Ingredients: Add the flour and a pinch of salt to the wet ingredients, stirring gently but thoroughly until the batter is well combined and smooth.
  5. Prepare for Baking: Spread the batter evenly into the prepared baking pan. In a small bowl, mix together the sugar and cinnamon, then sprinkle this cinnamon sugar mixture evenly over the top of the batter.
  6. Bake: Place the pan in the preheated oven and bake for 22 minutes, or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs.
  7. Cool and Serve: Allow the blondies to cool completely in the pan on a wire rack before cutting into 16 pieces for serving.

Notes

  • Ensure the butter is fully melted but not too hot when mixing to avoid cooking the eggs prematurely.
  • Do not overbake to keep the blondies moist and chewy.
  • For a richer flavor, brown the butter before melting.
  • Use parchment lining for easy removal and cleaner edges.
  • Leftover blondies can be stored in an airtight container at room temperature for up to 3 days.
