Ingredients

Pasta and Cheese

  • 8 oz short pasta (such as macaroni, shells, or similar)
  • 1 round Boursin cheese (about 5.2 oz), herbed garlic and fine herbs flavor
  • 1 cup grated white cheddar cheese, packed

Dairy and Sauce

  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 tsp salt
  • 2 tbsp unsalted butter (for sauce)
  • 2 tbsp all-purpose flour

Topping

  • 1 cup plain breadcrumbs
  • 2 tbsp unsalted butter (for breadcrumb topping)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Make the Roux: In the same pot, melt 2 tablespoons of unsalted butter over medium heat. Once melted, sprinkle in 2 tablespoons of all-purpose flour, whisking constantly until the mixture forms a smooth paste and turns a light golden color, about 2 minutes.
  3. Add Cream and Milk: Gradually whisk in 1 cup heavy cream and 1/2 cup milk, continuing to whisk to avoid lumps. Bring the mixture to a gentle simmer; it will thicken to create a smooth sauce.
  4. Melt the Cheeses: Lower the heat and add the entire round of Boursin cheese, stirring until melted and incorporated. Then add 1 cup packed white cheddar cheese, stirring until fully melted and the sauce is smooth and creamy. Season with 1/2 teaspoon salt, adjusting to taste.
  5. Combine Pasta and Sauce: Add the cooked and drained pasta back into the pot with the cheese sauce. Stir thoroughly to coat all the pasta evenly.
  6. Prepare Breadcrumb Topping: In a small pan, melt 2 tablespoons of unsalted butter over medium heat. Add 1 cup plain breadcrumbs and stir continuously until the breadcrumbs are golden brown and crisp, about 3-4 minutes.
  7. Assemble and Serve: Transfer the mac and cheese into serving bowls or an oven-safe dish if preferred. Sprinkle the browned breadcrumb topping evenly over the pasta. Serve immediately for maximum crunch and creaminess.
