Chicken Nuggets

Chick-Fil-A Style Sauce

  • ¼ cup + 2 tablespoons Whole30 mayonnaise
  • 3 tablespoons coconut aminos (if on Whole30)
  • 2 teaspoons maple syrup (if not on Whole30)
  • 1 tablespoon coconut aminos (if not on Whole30)
  • 1 tablespoon yellow mustard
  • 2 teaspoons Dijon mustard
  • 2 teaspoons freshly squeezed lemon juice
  • 1 tablespoon Whole30 ketchup
  • ¾ teaspoon liquid smoke
  • 1 pinch salt

Instructions

  1. Marinate Chicken: Combine the bite-sized chicken breast chunks with ½ cup dill pickle juice in an airtight container or large plastic bag. Refrigerate for at least one hour, preferably overnight, tossing the chicken pieces occasionally to ensure even marination.
  2. Prepare Coatings: Pour the beaten egg into a shallow bowl. In another shallow bowl, whisk together the almond flour, coconut flour, tapioca starch, salt, onion powder, dried oregano, paprika, garlic powder, pepper, and dried basil until well combined.
  3. Coat Chicken: Drain the chicken pieces from the pickle juice. Dip each piece first into the beaten egg, then into the flour and spice mixture, ensuring each nugget is thoroughly coated. Repeat until all chicken pieces are coated.
  4. Fry Nuggets: Heat a thin layer of refined coconut oil or avocado oil in a large cast-iron skillet over medium-high heat. Fry the coated chicken nuggets in batches, cooking each side until the nuggets are golden brown and cooked through, approximately 5-6 minutes total per batch. Avoid overcooking.
