A creamy and satisfying Vegetable Potato Salad combining tender mashed potatoes, mixed vegetables, hard-boiled eggs, and a sweet, tangy mayonnaise dressing. Perfect as a side dish for picnics, cookouts, or family meals, this salad is easy to prepare and best served chilled.

Ingredients

Potatoes

  • 6-8 medium potatoes (white flesh, peeled and roughly chopped)
  • 1/2 teaspoon salt

Dressing and Add-ins

  • 1/2 cup mayonnaise
  • 2 tablespoons sugar
  • 15 ounces canned mixed vegetables (drained)
  • 6 large eggs (hard boiled, peeled and roughly chopped)
  • 1/4 cup green onions (finely sliced)

Instructions

  1. Boil Potatoes: Add the chopped potatoes and salt to a large pot and cover with cold water. Bring to a boil and cook until the potatoes are fork-tender, about 12-15 minutes. Drain and set aside to cool slightly.
  2. Mash Potatoes: Using a hand-held potato masher or potato ricer, mash the potatoes thoroughly, making sure there are no lumps left for a smooth texture.
  3. Mix Ingredients: Add the mayonnaise, sugar, drained mixed vegetables, chopped hard-boiled eggs, and sliced green onions to the mashed potatoes. Using a large spoon, vigorously mix all ingredients together until well combined.
  4. Adjust Seasoning: Taste the salad and adjust the salt or sugar to balance the seasoning and sweetness according to your preference.
  5. Chill Salad: Transfer the potato salad to a glass bowl with a tight-fitting lid and refrigerate for at least 4 hours or preferably overnight to allow flavors to develop and the salad to chill completely.

  • Use white-fleshed potatoes for a creamy mash; Yukon Gold is a great choice.
