Ingredients

Dry Ingredients

  • 1/3 cup quick oats
  • 1/3 cup oat flour
  • 1 tbsp granulated sugar of choice
  • 1/4 tsp baking powder
  • Pinch of salt

Wet Ingredients

  • 1/2 tsp vanilla extract
  • 2 tbsp coconut oil
  • 3 tbsp milk of choice (unsweetened almond milk recommended)

Toppings

  • Crushed Oreos cookies (quantity as desired)
  • Sugar-free white chocolate chunks (quantity as desired)

Instructions

  1. Prepare Ingredients: Gather and measure all the ingredients. In a mixing bowl, combine the oat flour, quick oats, granulated sugar, baking powder, and a pinch of salt. Stir well to distribute all the dry ingredients evenly.
  2. Mix Wet Ingredients: Add the vanilla extract, coconut oil, and milk of choice to the dry mix. Stir until the dough is well combined and sticky in texture, ensuring there are no dry pockets of flour.
  3. Add Toppings: Fold in crushed Oreos and sugar-free white chocolate chunks into the dough. Use as much as you like for a richer cookies and cream flavor.
  4. Shape Cookies: Slightly flatten the dough balls with your fingers to form cookie shapes. Place them spaced apart on a baking pan lined with parchment paper or lightly greased.
  5. Bake: Preheat the oven to 180°C (356°F). Bake the cookies for 20 minutes until they are set and lightly golden on the edges.
  6. Cool and Serve: Remove the cookies from the oven and let them cool on the baking pan for a few minutes before transferring to a wire rack. Enjoy these ultimate cookies and cream cookies warm or at room temperature.

Notes

  • Use sugar-free white chocolate chunks to reduce sugar content, or substitute with regular white chocolate if preferred.
  • The dough is sticky; chilling it for 10-15 minutes can make shaping easier.
  • Store baked cookies in an airtight container to keep them fresh for up to 3 days.
  • You can substitute coconut oil with butter for a different flavor profile.
  • Feel free to experiment with different types of milk, such as oat or soy milk, for alternative dietary needs.
