This Turkey Taco Soup is a hearty, healthy, and flavorful meal perfect for a quick weeknight dinner. Made with lean ground turkey and packed with vegetables, beans, and bold taco seasonings, this soup delivers all the flavors of a taco in a comforting bowl. Ingredients

Protein

  • 1.3 lbs 99% lean ground turkey

Vegetables

  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 10 oz can Rotel tomatoes with green chilies
  • 15 oz canned or frozen corn, drained

Beans

  • 15 oz no salt added kidney beans, drained
  • 16 oz can fat-free refried beans

Other Ingredients

  • 8 oz tomato sauce
  • 2 tablespoons + 1 1/2 teaspoons taco seasoning (or 1 packet store bought low-sodium taco seasoning)
  • 2 1/2 cups less-sodium chicken broth
  • Olive oil cooking spray

Instructions

  1. Brown the turkey: Spray a large pot with cooking spray and place over medium heat. Add the ground turkey and cook, breaking it up with a wooden spoon as it cooks until fully browned and no longer pink.
  2. Cook the vegetables: Add the chopped onion and bell pepper to the pot with the browned turkey and cook for 2 to 3 minutes until the vegetables soften slightly.
  3. Add remaining ingredients: Stir in the Rotel tomatoes with green chilies, drained corn, kidney beans, tomato sauce, fat-free refried beans, taco seasoning, and less-sodium chicken broth. Mix well to combine all ingredients.
  4. Simmer the soup: Bring the mixture to a boil, then cover the pot and reduce heat to low. Let the soup simmer gently for 10 to 15 minutes to let flavors meld.
  5. Serve and garnish: Ladle the soup into bowls and serve with your favorite toppings such as low-fat sour cream, jalapeños, reduced fat shredded cheese, chopped scallions, fresh cilantro, or onions.
  6. Storage: Freeze any leftovers in individual portions for quick and easy future meals.
