Ingredients

Salmon

  • 2 1/2 lbs salmon filet, sliced into 2″ wide slices

Teriyaki Sauce

  • 3 Tbsp teriyaki sauce
  • 3 Tbsp hoisin sauce
  • 3 Tbsp soy sauce
  • 1 Tbsp white vinegar
  • 1 Tbsp sesame oil
  • 1/3 cup packed light brown sugar
  • 2 large or 3 medium garlic cloves, minced
  • 2 tsp freshly grated ginger (or 1/2 tsp ground ginger)

Garnish (optional)

  • Sesame seeds
  • Green onion, chopped

Instructions

  1. Prep: Grease a large rimmed baking sheet by covering it with foil and then greasing it to make clean-up easier. Preheat your oven to 400˚F (204˚C).
  2. Make the Sauce: In a mixing bowl, combine the teriyaki sauce, hoisin sauce, soy sauce, white vinegar, sesame oil, light brown sugar, minced garlic, and grated ginger. Stir the mixture until the brown sugar is fully dissolved and the sauce is smooth.
  3. Marinate the Salmon: Place the individual salmon slices into a large bowl. Pour the prepared teriyaki sauce over the salmon. Cover the bowl tightly with plastic wrap and allow the salmon to marinate for 20 minutes at room temperature or in the refrigerator to absorb the flavors.
  4. Bake the Salmon: Transfer the marinated salmon slices onto the prepared baking sheet, spacing them evenly. Keep the leftover marinade for the sauce. Bake the salmon in the preheated oven for 12-16 minutes, or until the salmon is flaky and cooked through. The baking time may vary slightly depending on the thickness of your salmon slices.
  5. Prepare the Teriyaki Glaze: While the salmon is baking, pour the remaining marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce to a simmer. Cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat once syrupy.
  6. Finish & Serve: When the salmon is done, remove it from the oven and brush each piece generously with the thickened teriyaki glaze. Garnish with chopped green onion and a sprinkle of sesame seeds if desired. Serve immediately and enjoy!

Notes

  • Marinate salmon no longer than 20 minutes to avoid over-curing the fish with acidic ingredients.
  • For easier clean-up, lining the baking sheet with foil is recommended.
  • Baking times might vary depending on the thickness of the salmon slices—check for flakiness with a fork.
  • Sesame seeds and green onion are optional but add great texture and color.
  • Use fresh ginger for best flavor; ground ginger is a good substitute if fresh is unavailable.
