Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) to prepare it for baking the pudding.
  2. Beat the Eggs: Using an electric mixer, beat the eggs in a mixing bowl until they become fluffy and light, helping to create a smooth and airy pudding texture. Set them aside once done.
  3. Combine Sweet Potato and Sugar: In a separate bowl, whisk together the sweet potato mash and brown sugar until well incorporated. Then add the vanilla extract and cinnamon, mixing thoroughly to distribute the flavors evenly.
  4. Add Almond Milk: Pour the almond milk into the sweet potato mixture and whisk until the batter is smooth and uniform in consistency.
  5. Incorporate Eggs: Slowly add the beaten eggs into the mixture, whisking continuously until everything is well combined for a homogenous pudding batter.
  6. Prepare Ramekins: Pour the pudding mixture evenly into individual ramekins, filling them up for baking.
  7. Set Up Water Bath: Place the filled ramekins on a baking sheet and carefully pour about 1 inch of hot water around them. This water bath will help the pudding cook gently and evenly.
