A fresh and tangy carrot salad combining crisp matchstick carrots, sweet apple, toasted pecans, and raisins tossed in a creamy honey Dijon dressing. Perfect for a quick side dish or light lunch, this salad is ready in just 10 minutes and serves six.

Ingredients

Dressing

  • 3 tbsp. mayonnaise
  • 3 tbsp. coarse grain Dijon mustard
  • 3 tbsp. apple cider vinegar
  • 3 tbsp. honey
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper

Salad

  • 2 (10-oz.) bags matchstick carrots
  • 1 red apple, cut into matchsticks
  • 1/2 cup chopped toasted pecans
  • 1/2 cup raisins
  • 2 tbsp. fresh parsley, chopped

Instructions

  1. Prepare the Dressing: In a medium bowl, stir together the mayonnaise, coarse grain Dijon mustard, apple cider vinegar, honey, salt, and ground black pepper until the mixture is smooth and well combined.
  2. Combine Salad Ingredients: Add the matchstick carrots, matchstick-cut red apple, chopped toasted pecans, raisins, and chopped fresh parsley to the bowl with the dressing.
  3. Toss and Serve: Toss all ingredients thoroughly to ensure everything is evenly coated with the dressing. Serve the salad immediately for the freshest taste, or refrigerate it for up to one day to enjoy chilled.

Notes

  • For best flavor, use fresh parsley and toasted pecans.
  • The salad can be prepared a few hours ahead and chilled, but avoid making it too far in advance to keep the apple crisp.
  • To toast pecans, heat them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant.
  • This salad is naturally gluten-free and can be made vegan by substituting mayonnaise with a plant-based alternative and using maple syrup instead of honey.
