  • 3 cups chopped peaches, peeled or unpeeled
  • 2 cups cherry tomatoes, halved

  • ¼ cup pine nuts (optional)

Dressing

  • ½ cup white balsamic vinegar
  • ¼ cup honey
  • 2 cloves garlic
  • ¼ red onion
  • 1 tablespoon Country Dijon Mustard
  • ½ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta: Boil the pasta in salted water until al dente. Once cooked, drain well and let it cool slightly.
  2. Prepare produce: In a large bowl, combine the halved cherry tomatoes, chopped peaches, and fresh corn kernels. Mix gently to combine.
  3. Make dressing: Place whole garlic cloves and red onion into a food processor. Add white balsamic vinegar, honey, and Dijon mustard. Process until the onion and garlic are finely chopped.
