This easy Stuffing Cornbread recipe combines the convenience of Jiffy cornbread mix and boxed stuffing mix with wholesome ingredients like buttermilk, chicken stock, eggs, and butter to create a savory and moist side dish perfect for any meal or holiday feast.

Ingredients

Wet Ingredients

  • 1 cup buttermilk
  • ½ cup unsalted chicken stock (or water; can use salted chicken stock or broth, see notes)
  • 2 large eggs
  • ½ cup (1 stick) unsalted butter, melted and slightly cooled (can use salted butter, see notes)

Dry Ingredients

  • 8.5 ounce box Jiffy cornbread mix
  • 6 ounce box Stove Top stuffing mix

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C). Prepare a 9×9 inch baking dish by spraying it generously with baking spray to prevent sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the buttermilk, unsalted chicken stock, eggs, and melted unsalted butter until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: Add the Jiffy cornbread mix and Stove Top stuffing mix to the wet ingredients in the bowl. Stir everything thoroughly until there are no visible dry patches and the batter is evenly mixed.
  4. Prepare for Baking: Pour the batter into the sprayed baking dish and use a spatula to smooth out the top evenly for consistent baking.
  5. Bake: Place the baking dish in the oven and bake for 20 to 24 minutes. Check doneness by ensuring the top is lightly golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove from the oven and allow the stuffing cornbread to cool slightly before slicing and serving as a delicious savory side dish.

Notes

  • You may substitute the unsalted chicken stock with water or salted chicken stock/broth for added flavor, adjusting salt levels accordingly.
  • Using salted butter will add some salt to the recipe, so reduce any added salt if you make this swap.
  • Ensure the butter is slightly cooled before mixing to prevent cooking the eggs prematurely.
  • Check for doneness by looking for a golden top and a clean toothpick insertion.
  • Serve warm as a side dish complementing poultry, vegetables, or any festive meal.
