Instructions

  1. Prepare Baking Tray: Line a large baking tray with parchment paper and set it aside to use later for shaping the cookies.
  2. Mix Dry Ingredients: In a large mixing bowl, add the crispy rice cereal and set aside while you prepare the melted mixture.
  3. Melt Wet Ingredients: In a microwave-safe bowl or on the stovetop, combine chocolate chips, peanut butter, maple syrup, and coconut oil. Melt the mixture until fully combined, using 30-second spurts on medium power in the microwave to avoid overheating, stirring in between.
  4. Combine Mixtures: Pour the melted wet mixture over the crispy rice cereal. Use a large spoon or spatula to mix thoroughly until the cereal is evenly coated.
  5. Shape Cookies: Using a cookie scoop or spoon, drop portions of the cookie batter onto the lined baking tray about 2-3 inches apart. Gently press each mound to form cookie shapes.
  6. Refrigerate to Set: Place the baking tray in the refrigerator and chill until the cookies are firm, which typically takes about 30 minutes to 1 hour.
