These soft and gooey cookies are decorated with candy eyes to add a playful monster look, making them perfect for parties or festive snacking.

Ingredients

Cookie Dough

  • 2 sticks (1 cup) salted butter, at room temperature
  • 1 cup dark brown sugar
  • 1/3 cup light brown sugar (or more dark brown sugar)
  • 2 large eggs
  • 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups old fashioned oats
  • 1 1/4 cups Halloween M&M’s
  • 1 cup mini pretzel sticks, crushed
  • 1 cup semi-sweet chocolate chips or chunks

Decoration

  • Candy eyes

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper to prevent sticking and promote even baking.
  2. Mix Wet Ingredients: In a large bowl, beat together the softened butter, dark brown sugar, light brown sugar, and vanilla extract until smooth and combined. Then, add the 2 eggs and 1 egg yolk one at a time, beating well after each addition to incorporate thoroughly.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, baking soda, baking powder, and kosher salt to the wet mixture. Beat until everything is just combined. Stir in the old fashioned oats until evenly distributed within the dough.
  4. Fold in Mix-ins: Gently fold in 1 cup of the Halloween M&M’s, crushed mini pretzels, and semi-sweet chocolate chips, ensuring an even spread of textures and flavors throughout the dough.
  5. Shape Cookies: Roll the cookie dough into balls using about 1/4 cup of dough per cookie. Place each ball on the prepared baking sheet, spacing them about 3 inches apart to allow room for spreading while baking.
  6. Bake Initial: Bake the cookies in the preheated oven for 8 minutes. After 8 minutes, rotate the pan to ensure even baking and bake for an additional 2 minutes.
  7. Add Decorations: Remove the baking sheet from the oven. Immediately press the remaining 1/4 cup of M&M’s and candy eyes into the tops of the warm cookies to give them a monster-like appearance.
  8. Final Bake: Return the cookies to the oven and bake for another 2 to 3 minutes to set the decorations and finish baking the cookies through.
  9. Cool and Serve: Remove the cookies from the oven and allow them to cool on the baking sheet. They will continue to cook slightly as they cool, helping them set into a perfect chewy texture.
  10. Storage: Enjoy your cookies warm, or once completely cooled, store them in an airtight container for up to 4 days to maintain freshness.

Notes

  • For best results, use room temperature butter to ensure a smooth dough.
  • The spacing between cookies is important to prevent them from merging during baking.
  • Rolling dough into uniform 1/4 cup balls helps cookies bake evenly.
  • Adding candy eyes after partial baking ensures they won’t melt completely.
  • Store cookies at room temperature in an airtight container to keep them soft.
  • Variations can include substituting different mix-ins such as nuts or dried fruit.
