Ingredients

Bean Layer

  • 1 packet taco seasoning
  • 2 (8 ounce) cans refried black beans

Guacamole Layer

  • 4 avocados or 2 cups guacamole
  • 1 teaspoon chili powder
  • 1 teaspoon garlic salt
  • ½ lime, juiced

Additional Layers

  • 2 cups sour cream
  • 2 cups Mexican cheese, shredded
  • 2 cups salsa
  • 2 cups lettuce, shredded
  • 1-2 (3.8 ounce) cans black olives, sliced
  • Tortillas of different colors (spinach, tomato basil, blue corn, and white flour tortillas)
  • Tortilla chips, for serving

Instructions

  1. Prepare the Bean Layer: In a large mixing bowl, combine the refried black beans and taco seasoning thoroughly to infuse the beans with flavor.
  2. Make the Guacamole Mixture: In a separate bowl, mash the avocados or use guacamole, and mix in the chili powder, garlic salt, and freshly squeezed lime juice until smooth.
  3. Layer the Beans: Spread the seasoned bean mixture evenly over the bottom of a 9×13 inch pan, creating the first layer of the dip.
  4. Add Guacamole and Other Layers: Carefully layer the guacamole mixture over the beans, followed by sour cream, salsa, shredded Mexican cheese, and shredded lettuce in that order.
  5. Create the Spooky Graveyard Decorations: Preheat your oven to 350°F (175°C). Using a knife or cookie cutters, cut tombstone shapes, fence posts, bats, cats, and ghosts from colored tortillas (spinach, tomato basil, blue corn) and white flour tortillas.
  6. Bake the Tortilla Cutouts: Arrange the shaped tortilla pieces on a cookie sheet and bake for 5 to 7 minutes until slightly crispy but not burnt.
  7. Assemble the Graveyard: Remove the baked cutouts from the oven and place them standing upright or flat in the bed of shredded lettuce to represent grass on top of the layered dip.
  8. Add the Dirt Details: Scatter the chopped black olives around the tombstones and fence posts to mimic dirt for a realistic spooky effect.
  9. Serve: Present your spooky graveyard bean dip with a side of tortilla chips or fresh cut vegetables for dipping, and enjoy this festive Halloween treat!

Notes

  • For best flavor, make the dip a few hours ahead and refrigerate to allow flavors to meld.
  • Use fresh avocados for the guacamole layer or store-bought guacamole for convenience.
  • Colored tortillas can be found in specialty grocery stores or substituted with regular tortillas.
  • Adjust the amount of taco seasoning to your preferred spice level.
  • Serve chilled or at room temperature.
