Ingredients

Dip Layers

  • 1 (10.5 ounce) can refried beans
  • 1 ½ cups chunky tomato salsa
  • 1 ½ cups sour cream, divided
  • 2 tablespoons taco seasoning mix
  • 1 (3.8 ounce) can sliced black ripe olives
  • 1 bunch green onions, chopped, divided
  • 1 cup shredded Monterey Jack and cheddar cheese, divided
  • 1 ½ cups prepared guacamole
  • 6 cherry tomatoes, quartered
  • 1 (6 ounce) can medium black olives (for garnishing and olive spiders)

Serving Board

  • Tomato salsa (for serving)
  • Salsa verde (for serving)
  • Blue corn tortilla chips
  • Yellow corn tortilla chips
  • Mini bell peppers, halved and seeded

Instructions

  1. Prepare the base layer: Spread the refried beans evenly in the bottom of your serving bowl to create a solid foundation for the dip.
  2. Add salsa layer: Spoon the chunky tomato salsa over the beans in an even layer.
  3. Reserve sour cream for decoration: Set aside ¼ cup of sour cream in a squeeze bottle or a plastic baggie with a small cut at the corner to use later for drawing the spiderweb.
  4. Season and spread sour cream: In a medium bowl, mix the remaining sour cream with the taco seasoning until well combined. Spread this mixture evenly on top of the salsa layer.
  5. Add olives, onions, and cheese: Sprinkle the sliced black olives evenly over the sour cream layer, then add the chopped green onions, followed by the shredded Monterey Jack and cheddar cheese.
  6. Spread guacamole: Gently layer the prepared guacamole over the cheese layer with care to keep all layers distinct.
  7. Draw the spiderweb: Using the reserved sour cream in the squeeze bottle or bag, draw four long crossing straight lines on the guacamole, then connect them around the circle with four arching lines to form a spiderweb effect.
  8. Garnish the dip rim: Decorate the rim of the dip with more shredded cheese, cherry tomato quarters, sliced black olives, and chopped green onions for added color and flavor.
  9. Create olive spiders: Slice whole olives lengthwise; use one half as the spider’s body and place it on the spiderweb. Thinly slice other halves into strips for the legs, placing three legs on each side of the olive body.
  10. Assemble the serving board: Place the finished seven-layer dip in the center of an 18” x 12” wooden board. Place tomato salsa and salsa verde in small bowls on opposing sides of the dip.
  11. Arrange dippers: Arrange blue corn and yellow corn tortilla chips at the top and bottom of the board. Place halved mini bell peppers alongside the sides of the dip.
