Ingredients

Noodles and Vegetables

  • 3 green onions, thinly sliced

  • ½ cup roasted peanuts, roughly chopped
  • 2 teaspoons sesame seeds

Peanut Sauce

  • ½ cup creamy peanut butter
  • 1 tablespoon warm water (adjust as needed to thin sauce)
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (or chili garlic sauce, adjust to spice level)
  • ½ lime, juiced

Instructions

  1. Cook Noodles: Bring a large pot of water to a boil. Cook soba noodles according to package instructions until tender. Drain and rinse under cool water to stop cooking and remove excess starch. Toss noodles with 1 teaspoon of sesame oil to prevent sticking and set aside.
  2. Prepare Peanut Sauce: In a medium bowl, whisk together peanut butter and warm water until smooth. Add soy sauce, rice vinegar, maple syrup, sesame oil, sriracha, and lime juice. Whisk until sauce becomes creamy and well combined. Adjust thickness with additional warm water if necessary, and taste to adjust saltiness, acidity, or heat as preferred.
  3. Heat Edamame: Warm shelled edamame either by microwaving for 1-2 minutes or by sautéing in a skillet over medium heat until heated through.
  4. Toss Noodles with Sauce: Place the cooked noodles in a large mixing bowl and toss thoroughly with the prepared peanut sauce until every strand is fully coated.
  5. Add Vegetables and Edamame: Incorporate the warmed edamame, julienned carrot, sliced red bell pepper, and green onions into the noodles. Toss everything together to combine evenly.
