This comforting Spaghetti Pie Casserole is a hearty and flavorful baked pasta dish combining tender spaghetti, savory ground beef, and a creamy cheese mixture, all topped with melted cheddar and Monterey Jack cheese. Perfect for a family dinner, it offers a delicious twist on traditional spaghetti with its layered casserole presentation.

Ingredients

Pasta and Meat

  • 1 package (8 ounces) spaghetti
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced

Sauce and Seasoning

  • 1 jar (14 ounces) spaghetti sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Cheese Mixture and Topping

  • 3 ounces reduced-fat cream cheese
  • 1 cup reduced-fat sour cream
  • 3 green onions, chopped
  • 1 1/2 cups shredded cheddar-Monterey Jack cheese blend

Instructions

  1. Cook the pasta and beef: Cook the spaghetti according to the package directions until al dente, then drain. Meanwhile, in a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic together for 6 to 8 minutes, breaking the beef into crumbles until no longer pink. Drain off any excess fat.
  2. Make the meat and cheese sauces: Stir the spaghetti sauce, salt, and pepper into the cooked beef mixture. Bring the pasta back to a boil briefly, then reduce heat and simmer uncovered for 20 minutes, stirring occasionally to meld flavors. In a separate small bowl, blend the reduced-fat cream cheese and sour cream until smooth, and then fold in the chopped green onions.
  3. Assemble and bake the casserole: Preheat your oven to 350°F (175°C) and grease an 11×7-inch baking dish. Layer the cooked spaghetti first, then spread the cream cheese and sour cream mixture over it, followed by the meat sauce. Top evenly with the shredded cheddar and Monterey Jack cheese blend. Cover the dish with foil and bake for 25 minutes. Then, remove the cover and bake uncovered for an additional 5 to 10 minutes, or until the cheese topping is bubbly and golden.

Notes

  • For a richer flavor, consider adding Italian seasoning or fresh basil to the meat sauce.
  • Use reduced-fat dairy products to keep the recipe lighter without sacrificing creaminess.
  • Let the casserole rest for 5 minutes after baking to set before serving.
  • This dish can be prepared a day ahead; refrigerate assembled casserole and bake when ready.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
