These S’mores Rice Krispies Treats are a delightful twist on the classic snack, combining the gooey texture of marshmallows with the crunch of Rice Krispies and Golden Grahams cereal, studded with melty chocolate pieces for the perfect campfire-inspired dessert that’s quick and easy to make.

Ingredients

Main Ingredients

  • 6 Tablespoons salted butter
  • 1 (12-ounce) bag jumbo marshmallows
  • 1 teaspoon vanilla extract
  • 4 cups Rice Krispies cereal
  • 2 cups Golden Grahams cereal
  • 2 1/2 cups mini marshmallows, divided (about 1/2 of a 10-ounce bag)
  • 4 Hershey bars, broken into pieces

Instructions

  1. Prepare the Pan: Line a 9×9 inch baking dish with parchment paper or butter it to ensure easy removal of the treats once set. Set aside.
  2. Melt Butter: In a large saucepan, melt 6 tablespoons of salted butter over medium heat.
  3. Add Jumbo Marshmallows: Add the entire 12-ounce bag of jumbo marshmallows to the melted butter. Stir continuously and gently melt until the marshmallows are completely smooth and melted.
  4. Flavoring: Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract to enhance the flavor.
  5. Add Cereals and Mini Marshmallows: Stir in 4 cups Rice Krispies, 2 cups Golden Grahams, and 1 1/2 cups of the mini marshmallows until the cereals are evenly coated with the melted marshmallow mixture.
  6. Layer the Mixture: Transfer half of the cereal mixture into the prepared pan and spread evenly. Sprinkle half of the broken Hershey bar pieces and half of the remaining 1 cup mini marshmallows over this layer.
  7. Add Remaining Mixture: Add the remaining cereal mixture on top, gently pressing it down to compact slightly without compressing too much to avoid dense treats.
  8. Top with Chocolate and Marshmallows: Sprinkle the rest of the Hershey bar pieces and mini marshmallows on the top layer.
  9. Cool and Cut: Allow the mixture to cool and firm up at room temperature, then cut into small squares to serve.

Notes

  • Storage: Best enjoyed the day they are made. Store leftovers in an airtight container at room temperature for up to 3 days. Reheat in the microwave for 15-20 seconds to soften.
  • Freezing: Wrap tightly in plastic wrap and aluminum foil, freeze up to 3 months. Thaw on the counter for 30 minutes or microwave for 15-20 seconds before serving.
  • Rice Krispies Alternative: Any fresh rice cereal works, or substitute with corn flakes or all Golden Grahams (though texture differs).
  • Golden Grahams Substitute: Use crushed graham crackers, Teddy Grahams, Fiber One Honey Squares, or Cinnamon Toast Crunch if unavailable.
  • Chocolate Options: Use chocolate chips, chunks, or candy bars like Ghirardelli squares or Reese’s peanut butter cups for variety and indulgence.
