Ingredients

Bread & Cheese

  • 2 slices whole grain bread (such as Daves Killer Thin Sliced 21 Whole Grains and Seeds)
  • ½ cup 2% cottage cheese (Good Culture preferred)

Toppings

  • 1 ½ ounces Nova Lox (sliced smoked salmon)
  • ½ cup Persian cucumbers, thinly sliced
  • ½ heirloom tomato, thinly sliced
  • Red onion, a few thin slivers
  • Everything bagel seasoning, to taste
  • 1 tablespoon fresh dill
  • Optional: Drizzle of extra virgin olive oil
  • Optional: A few capers

Instructions

  1. Toast the bread: Toast the two slices of whole grain bread until they are golden brown and crisp to your liking, providing a sturdy base for the toppings.
  2. Spread cottage cheese: Evenly spread ¼ cup of 2% cottage cheese on each slice of toasted bread to add a creamy texture and mild flavor.
