This Slow Cooker One Pot Chicken Burrito Filling recipe is a simple, hands-off meal perfect for busy days.   • 1 cup sweet onion, diced
  • 1 green bell pepper, diced
  • 15 oz pinto beans, drained and rinsed
  • 2 tbsp cilantro, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp chili powder
  • 1/4 tsp cumin
  • 16 oz salsa
  • 1 1/2 lbs boneless skinless chicken breasts (up to 2 lbs)
  • 1 1/2 cups Minute® rice, uncooked (to add at the end)
  • Tortillas, for serving
  • Cheese, for serving
  • Sour cream, for serving
  • Extra salsa, for serving

Instructions

  1. Combine Ingredients: Add the diced onion, bell pepper, rinsed pinto beans, chopped cilantro, salt, pepper, cumin, chili powder, and salsa into the slow cooker. Mix everything together well to distribute the flavors evenly.
  2. Add Chicken: Place the boneless skinless chicken breasts on top of the mixture in the slow cooker without stirring them in.
  3. Do Not Add Rice Yet: Important to note that rice is not added at this stage; it will be added later to avoid overcooking.
  4. Slow Cook: Cover the slow cooker with its lid and cook on LOW heat for 6 hours. Do not open the lid during cooking to ensure proper heat and moisture retention.
  5. Shred Chicken: After 6 hours, remove the lid and shred the chicken breasts directly in the slow cooker using two forks, mixing it into the other ingredients.
  6. Add Rice: Stir the uncooked Minute® rice into the shredded chicken and vegetable mixture.
  7. Cook Rice: Replace the lid and continue cooking on HIGH for an additional 20 minutes, allowing the rice to absorb the flavors and cook through.
  8. Serve: Spoon the chicken burrito filling onto tortillas and add your favorite toppings such as cheese, sour cream, and extra salsa. Roll them up and enjoy!

Notes

  • Do not add the rice until after the main cooking time to prevent it from becoming mushy.
  • For a spicier dish, add more chili powder or a pinch of cayenne pepper.
  • You can substitute Minute® rice with another quick-cooking rice, adjusting cooking time accordingly.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • If you prefer, cook on HIGH for 3-4 hours instead of LOW for 6 hours, but cooking times may vary by slow cooker.
