Ingredients

Chicken and Seasoning

  • 1 Tbsp cooking oil
  • 6 boneless skinless chicken thighs (about 2.3 lbs.)
  • Pinch salt
  • Pinch freshly cracked black pepper

Sauce and Toppings

  • 20 oz. can pineapple slices (in juice)
  • 1/2 cup BBQ sauce
  • 1 jalapeño, thinly sliced (optional)
  • 2 green onions, sliced

Instructions

  1. Heat the skillet: Heat a large skillet over medium heat until hot, then add the cooking oil and swirl to coat the surface. Season both sides of the chicken thighs with salt and pepper while waiting.
  2. Cook the chicken: Add the chicken thighs to the hot skillet and cook until golden brown on both sides and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken to a clean plate.
  3. Prepare pineapple juice: While the chicken cooks, drain the canned pineapple slices and reserve the juice for the sauce.
  4. Make the pineapple BBQ sauce: Lower the heat to low and add about 1/2 cup of the reserved pineapple juice to the skillet. Stir to loosen browned bits from the bottom. Add BBQ sauce and stir until thickened. Adjust salt to taste and add more pineapple juice if the sauce gets too thick.
  5. Combine chicken and pineapple: Return the cooked chicken thighs and pineapple slices to the skillet, coating both sides in the pineapple BBQ sauce. Spoon any extra sauce over the chicken.
  6. Broil to caramelize: Adjust your oven rack so the skillet sits about 6 inches from the broiler element and preheat the broiler to high. Transfer the skillet to the oven and broil for about 5 minutes until the BBQ sauce caramelizes on the edges. If you don’t have an oven-safe skillet, transfer everything to a casserole dish or skip this step.
  7. Garnish and serve: Remove from oven, sprinkle the thinly sliced jalapeño and green onions over the top, then serve immediately.
