A simple and delicious single-serve strawberry crisp crumble that combines sweet, saucy strawberries with a crunchy, buttery oat and walnut topping. Perfect for an easy dessert or tea time treat, ready in under 30 minutes using pantry staples and fresh fruit.

Ingredients

For the Fruit

  • 1/2 heaped cup fresh strawberries, quartered
  • 1 tsp lemon juice
  • 1 tbsp flour
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract

For the Crumble

  • 2 tbsp browned butter or melted butter
  • 1 tbsp brown sugar
  • 3 tbsp flour
  • 2 tbsp rolled oats (old fashioned)
  • 2 tbsp walnuts, roughly chopped
  • Pinch of salt
  • Pinch of cinnamon powder
  • 1 tbsp granulated sugar or Demerara sugar

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to ensure it is ready for baking the crumble.
  2. Prepare the Fruit Mixture: In a 5-inch ramekin, combine the quartered strawberries, lemon juice, flour, sugar, and vanilla. Stir gently to coat the fruit evenly and set aside.
  3. Make the Crumble Topping: In a mixing bowl, add the melted or browned butter, brown sugar, flour, rolled oats, salt, and cinnamon powder. Stir well to combine all ingredients uniformly.
  4. Add Walnuts and Form Clumps: Incorporate the chopped walnuts into the mixture and use your fingers to press and clump the mixture together, creating small chunks for the crisp topping.
  5. Assemble the Crumble: Transfer the crumble chunks evenly over the strawberry mixture in the ramekin. Sprinkle the granulated or Demerara sugar on top for a crunchy finish.
  6. Bake: Place the ramekin in the oven and bake for 15 minutes or until the topping is golden brown and the fruit juices are bubbling around the edges.
  7. Serve: Enjoy the crumble warm or hot. Optionally, dust with powdered sugar or serve with cold cream, custard, or vanilla ice cream for extra indulgence.

Notes

  • Avoid overbaking to keep the fruit sauce juicy at the bottom.
  • Feel free to substitute strawberries with any other fruit of your choice.
  • For a more fruit-forward dessert, you can increase the fruit quantity to up to 3/4 cup.
  • Butter can be browned or simply melted depending on preference for a nuttier flavor.
