Ingredients

Sauce Ingredients

  • 1/2 cup Tamari (or soy sauce)
  • 1/2 cup vegetable broth
  • 1 tablespoon Cornstarch
  • 1 tablespoon Honey
  • 1 teaspoon Ground Ginger (or 1 tablespoon fresh grated ginger)
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Rice Vinegar
  • 2 Large Garlic Cloves, minced

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1.5 pounds Chicken Breast, cut into bite-sized cubes
  • 16 ounces frozen stir fry vegetables

Instructions

  1. Preheat the skillet: Heat a large nonstick skillet over medium to medium-high heat. Add the olive oil and heat for about 30 seconds to prepare for cooking the chicken.
  2. Cook the chicken: Add the bite-sized chicken breast cubes to the hot skillet. Cook them thoroughly until no longer pink in the center, ensuring they are fully cooked for safety and flavor.
  3. Prepare the sauce: While the chicken cooks, combine tamari (or soy sauce), vegetable broth, cornstarch, honey, ground or fresh ginger, sesame oil, rice vinegar, and minced garlic in a mason jar. Secure the lid and shake vigorously to mix all ingredients well.
  4. Add vegetables and sauce: Once the chicken is cooked through, reduce the heat to medium. Add the frozen stir fry vegetables and pour in the prepared sauce. Stir continuously to prevent sticking and to evenly coat the chicken and vegetables.
  5. Simmer until thickened: Continue stirring for about 6 to 8 minutes, allowing the sauce to thicken and the vegetables to heat through properly while preserving their texture.
  6. Serve: Spoon the chicken, vegetable, and sauce mixture over hot cooked rice. Garnish with chopped green onions and sesame seeds if desired, then enjoy your quick and tasty weeknight stir fry!

Notes

  • Use tamari for a gluten-free alternative to soy sauce.
  • If fresh ginger is unavailable, ground ginger works well too.
  • Frozen stir fry vegetables save prep time and keep the dish colorful and flavorful.
  • Adjust honey amount to taste for sweetness preference.
  • Serve over rice or noodles for a complete meal.
