Sautéed Swiss Chard is a quick and easy side dish that turns fresh leafy greens into a tender, flavorful accompaniment perfect for enhancing any dinner plate. With garlic and a buttery olive oil base, this recipe brings out the natural earthiness of Swiss chard in just minutes.

Ingredients

Vegetables

  • 2 bunches Swiss chard, ends trimmed

Fat and Oil

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil

Seasoning

  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  1. Prepare the Swiss Chard: Rinse the Swiss chard thoroughly under cold water to remove any grit. Trim the tough ends and chop the leaves and stems into bite-sized pieces, separating stems from leaves as stems take a bit longer to cook.
  2. Heat the Fat: In a large skillet, warm the olive oil and unsalted butter together over medium heat until the butter is melted and the mixture is shimmering.
  3. Sauté Garlic and Stems: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then add the chopped Swiss chard stems and cook for 2 minutes, stirring occasionally.
  4. Add Leaves and Seasoning: Add the Swiss chard leaves to the skillet along with kosher salt and coarse black pepper. Stir well to combine.
  5. Cook Until Tender: Continue to sauté the chard, stirring frequently, until the leaves are wilted and tender and the stems are soft, about 2 more minutes.
  6. Finish and Serve: Taste and adjust seasoning if needed. Serve immediately as a nutritious and flavorful side dish to any main meal.

Notes

  • For extra flavor, add a splash of lemon juice or a sprinkle of red pepper flakes before serving.
  • To reduce sodium, adjust the amount of kosher salt to your preference.
  • Remove stems completely if you prefer softer texture only, or blanch stems beforehand to speed cooking.
