Delicious and easy-to-make Roasted Sardines with a flavorful garlic and herb crust, perfect as a savory side dish. This recipe combines fresh sardines with a zesty mustard, garlic, and herb blend, roasted to crispy perfection in the oven for a healthy, Mediterranean-inspired meal.

Ingredients

Sardines

  • 1 pound fresh sardines, cleaned, rinsed, and patted dry

Garlic and Herb Crust

  • 1 garlic clove, minced
  • 2 teaspoons French mustard
  • 1 tablespoon lemon juice, plus extra lemon for serving
  • 1 tablespoon dry oregano
  • ½ teaspoon paprika
  • 1 teaspoon dry onion flakes
  • ¼ teaspoon salt
  • Freshly ground black pepper, to taste
  • 3 tablespoons olive oil
  • 2 teaspoons fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 430°F (220°C) with the fan on to ensure even roasting and a crispy finish on the sardines.
  2. Prepare the Garlic and Herb Mixture: In a large bowl, combine minced garlic, French mustard, lemon juice, dry oregano, paprika, dry onion flakes, salt, freshly ground pepper, and olive oil. Mix well to create a flavorful dressing.
  3. Coat the Sardines: Gently add the cleaned sardines to the bowl and carefully toss them in the mixture until they are evenly coated with the garlic and herb dressing.
  4. Arrange Sardines on Pan: Grease a baking pan or cooking dish lightly with olive oil. Place the sardines in a single layer, ensuring they are not overlapping. Drizzle any remaining dressing over the sardines for extra flavor.
  5. Roast the Sardines: Roast in the preheated oven for 15 to 17 minutes. If the sardines are larger, you may need to roast for a few minutes longer to ensure they are cooked through and nicely browned.
  6. Garnish and Serve: Once roasted, remove the sardines from the oven. Sprinkle chopped fresh parsley over them and finish with a squeeze of fresh lemon juice before serving.

Notes

  • Make sure to pat the sardines dry to help the herb crust stick better and ensure crisp roasting.
  • Adjust roasting time slightly depending on the size of the sardines to avoid overcooking.
  • Fresh parsley and lemon juice added at the end brighten the flavors beautifully.
  • Serve immediately while hot for the best texture and flavor.
  • You can serve this dish as a side or light main paired with fresh salad or crusty bread.
