This Roasted Garlic Tomato Caprese is a flavorful twist on the classic Italian salad, featuring oven-roasted cherry tomatoes, sweet roasted garlic and shallots mashed into a luscious paste, creamy burrata cheese, and fresh basil. Drizzled with extra virgin olive oil and seasoned with thyme, chili flakes, salt, and pepper, this dish is perfect served with grilled bread or crackers for an easy and elegant appetizer or light meal.

Ingredients

Roasted Tomato Mix

  • 6-7 garlic cloves, peeled
  • 1 shallot, halved
  • 4 cups cherry tomatoes (divided: 3 cups for roasting, 1 cup for slicing)
  • 2 tablespoons fresh thyme leaves
  • 1/3 cup extra virgin olive oil (divided: 1/4 cup for roasting, 1/4 cup for mixing)
  • Salt, to taste
  • Black pepper, to taste
  • Chili flakes, to taste

Fresh Elements & Serving

  • 1 cup fresh basil leaves
  • Handful of micro basil (optional)
  • 2-3 balls burrata cheese, at room temperature
  • Grilled bread or crackers, for serving

Instructions

  1. Preheat and prepare for roasting: Preheat your oven to 400°F (200°C). In a baking dish, combine the peeled garlic cloves, halved shallot, 3 cups of cherry tomatoes, and fresh thyme leaves. Drizzle them with 1/4 cup of extra virgin olive oil, then season generously with salt, black pepper, and chili flakes to taste.
  2. Roast the vegetables: Place the baking dish in the oven and roast for about 20 minutes, or until the tomatoes have burst and softened, and the garlic and shallot are tender and fragrant.
  3. Prepare burrata and remaining tomatoes: While roasting, arrange the balls of burrata cheese in a serving bowl. Slice the remaining 1 cup of cherry tomatoes and set aside.
  4. Create the roasted garlic and shallot paste: Once the roasted garlic and shallots are cool enough to handle, squeeze them onto a cutting board. Mash or chop them finely to create a paste. Add this paste back into the baking dish with the tomatoes and stir well to combine. Then pour in the remaining 1/4 cup of olive oil and stir again. Adjust the seasoning with black pepper as needed.
  5. Assemble the Caprese: Spoon the roasted tomato mixture and olive oil generously over and around the burrata cheese in the serving bowl. Scatter the fresh basil leaves and optional micro basil on top, and then add the sliced fresh cherry tomatoes. Finish with a sprinkle of salt and chili flakes for extra flavor.
