Ingredients

Turkey Breast

  • 2 to 3 pounds boneless skin-on turkey breast
  • 2 tablespoons butter (softened)

  • 1 teaspoon orange zest
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper

Sweet Potatoes

  • 2 large sweet potatoes (peeled and cut into 1” cubes)
  • 1 teaspoon olive oil
  • 1 teaspoon fresh thyme (chopped)
  • ½ teaspoon salt
  • ¼ cup grated Parmesan cheese

Cornbread Dressing

  • 1 egg (beaten)
  • 1 cup chicken stock (or turkey stock)
  • 4 cups cornbread (cut in ¾” cubes, day old or toasted)
  • 1 large carrot (peeled and chopped, about ¼ cup)
  • 1 stalk celery (chopped, about ¼ cup)
  • ½ yellow onion (chopped, about 2 tablespoons)
  • 2 tablespoons butter (melted)
  • 2 tablespoons olive oil
  • 2 garlic cloves (chopped, about 1 teaspoon)
  • 1 teaspoon fresh thyme (minced)
  • 1 teaspoon fresh sage (minced)
  • Salt and pepper (to taste)

Brussels Sprouts

  • 1 pound fresh Brussels sprouts (halved and outer leaves removed)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced, about 2 teaspoons)
  • Salt and pepper (to taste)

Instructions

  1. Par-Bake the Turkey: Preheat your oven to 375°F. Remove the turkey from its mesh bag and gently lift the skin from the breast without completely removing it. In a small bowl, mix softened butter, chopped thyme, minced garlic, and orange zest. Spread this butter mixture under the skin over the breast, then reposition the skin. Rub the turkey breast well with olive oil, salt, and pepper on all sides. Place skin side up on a sheet pan and bake for 15 minutes if thawed, or 30 minutes if frozen or partially frozen.
  2. Prepare the Sweet Potatoes: In a large bowl, toss peeled and cubed sweet potatoes with olive oil, chopped thyme, and salt. Set aside but do not add Parmesan yet.
  3. Make the Cornbread Dressing: Combine beaten egg, chicken or turkey stock, cubed cornbread, chopped carrot, celery, yellow onion, melted butter, olive oil, chopped garlic, thyme, sage, salt, and pepper in a large bowl. Mix well and set aside.
  4. Prepare Brussels Sprouts: In another large bowl, toss halved Brussels sprouts with olive oil, minced garlic, salt, and pepper. Set aside.
  5. Assemble and Bake: Remove the turkey breast from the sheet pan and set aside. Spread the cornbread dressing evenly onto half of the sheet pan, patting it into a flat 1-inch thick layer. Place the turkey breast on top of the dressing. Spread the sweet potatoes on one-quarter of the sheet pan and the Brussels sprouts on the remaining quarter, each in an even layer. Bake everything together for 30 to 40 minutes more, flipping the vegetables and dressing halfway through at about 15-20 minutes. Use an instant-read thermometer to ensure the turkey breast reaches 165°F.
  6. Finish and Serve: Just before serving, sprinkle grated Parmesan cheese over the roasted sweet potatoes. Serve the turkey breast with the warm sides immediately for a comforting and complete meal.
