Ingredients

Dry Ingredients

  • 1/3 cup (40 grams) Simple Mills almond flour pancake mix
  • 2.5 tablespoons (13 grams) vanilla protein powder
  • 1/8 teaspoon baking soda
  • Dash of cinnamon
  • 1 teaspoon (2 grams) NOW acacia fiber powder (optional)

Wet Ingredients

  • 1/3 cup (90 grams) liquid egg whites

Instructions

  1. Combine Ingredients: Whisk all of the dry and wet ingredients together in a large bowl until fully combined, ensuring no lumps remain for a smooth batter.
  2. Cook Pancakes: Pour the batter into an 8-inch nonstick pan over medium heat. Cook each side for about 2 minutes or until golden brown and cooked through.
  3. Add Toppings: Serve hot with your favorite toppings. Popular choices include PBFit peanut butter powder or natural peanut butter and fresh berries for extra flavor and nutrition.

Notes

  • If desired, the acacia fiber powder can be omitted or substituted with another fiber supplement.
  • Use a nonstick pan to prevent the pancakes from sticking and to reduce the need for added fats.
  • Adjust cooking time slightly based on your stove’s heat to avoid burning.
  • These pancakes are best enjoyed immediately but can be stored in the refrigerator and reheated gently.
