Instructions

  1. Prep your watermelon: Dice the watermelon into 1-inch cubes. Spread the cubes in a single layer on a parchment paper-lined baking sheet and place it in the freezer. Freeze for about 5 hours or until the watermelon is completely frozen.
  2. Blend: Place the frozen watermelon chunks, lime juice, and sea salt (if using) into a high-powered blender or Vitamix. If the blender struggles, let the watermelon sit a few minutes to soften slightly. Blend until the mixture reaches a shaved ice consistency, smooth and scoopable.
  3. Enjoy: Serve immediately as a refreshing sorbet. You can also store it in the freezer for a firmer texture, allowing it to soften briefly before scooping again.
