These Reese’s Pieces cookies are irresistibly chewy and sweet, packed with colorful, bite-sized peanut butter candies. Perfect for Halloween or any time you crave a fun, flavorful treat, these cookies are quick to prepare without any chilling time, baking to perfection in just minutes.

Ingredients

Cookie Dough

  • 1 cup butter (softened, at room temperature)
  • ¾ cup sugar
  • ¾ cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs (room temperature)
  • 2¾ cups all-purpose flour (spooned and leveled)

Add-ins

  • 2 cups Reese’s Pieces

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C/Gas Mark 5) and line one or two baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Mix Wet Ingredients: Using a stand mixer or electric mixer, cream together the softened butter, sugar, light brown sugar, vanilla extract, baking soda, and salt until the mixture is smooth and creamy, creating a well-incorporated base for your dough.
  3. Add Eggs: Beat in the eggs one at a time, ensuring each is fully incorporated to provide structure and moisture to the dough.
  4. Incorporate Flour: Slowly add the all-purpose flour while mixing until almost all the flour disappears. Turn off the mixer and gently fold in the Reese’s Pieces candies to evenly distribute them throughout the dough without breaking them.
  5. Scoop Cookies: Use a cookie scoop to drop heaping tablespoon-sized portions of dough onto the prepared baking sheets, spacing them a couple of inches apart to allow room for spreading.
  6. Bake: Place the trays into the preheated oven and bake for 9 to 11 minutes, or until the cookies are set but still soft in the center.
  7. Cool: Remove cookies from the oven and let them cool on the baking sheet for 2 to 3 minutes before transferring them to a wire rack to cool completely, helping them firm up without overcooking.

Notes

  • No chilling time is needed, making these cookies quick and easy to prepare.
  • You can double or triple the ingredient amounts to make larger batches.
  • For best texture, avoid overbaking; cookies should be set but still soft in the center upon removal from the oven.
  • Store cookies in an airtight container at room temperature for up to 5 days to maintain freshness.
  • Room temperature ingredients help in achieving an even dough consistency and better texture.
