Ingredients

Chocolate Layer

  • 1 cup dark chocolate
  • 1 tbsp coconut oil
  • 2 tbsp peanut butter
  • 3 tbsp quinoa crisps

Peanut Butter Filling

  • 1/3 cup peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp coconut flour

Instructions

  1. Prepare Chocolate Mixture: Add dark chocolate and coconut oil to a medium bowl and microwave in 30-second increments, stirring thoroughly between each until the chocolate is fully melted and smooth.
  2. Mix Chocolate Layer Ingredients: Stir in 2 tablespoons of peanut butter and 3 tablespoons of quinoa crisps into the melted chocolate and set the mixture aside.
  3. Prepare Peanut Butter Filling: In a small bowl, combine 1/3 cup peanut butter and 1 tablespoon maple syrup until smooth.
  4. Thicken Filling: Gently fold in 1 tablespoon of coconut flour to the peanut butter mixture; this will help thicken the filling to a scoopable consistency.
  5. Assemble Cups – Base Layer: Spoon about 1/2 tablespoon of the chocolate mixture into silicone cupcake liners, spreading lightly to form an even base.
  6. Add Peanut Butter Filling: Roll 1 teaspoon of the peanut butter mixture into a ball, flatten slightly, and place it in the center of the chocolate base in each liner, ensuring it does not touch the liner sides.
