Ingredients

Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch cubes

Bang Bang Sauce

  • 1 cup mayonnaise
  • 1/2 cup sweet chili sauce

  • 2 tbsp honey
  • 1 tsp salt

Instructions

  1. Prepare the chicken: Cut the boneless, skinless chicken thighs into 1-inch cubes to ensure even cooking and uniform texture.
  2. Marinate the chicken: In a large mixing bowl, combine chicken cubes with olive oil, paprika, garlic powder, salt, and black pepper. Toss well to coat evenly. Refrigerate and marinate for at least 30 minutes to allow flavors to meld.
  3. Make the Bang Bang sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, hot sauce, honey, and salt until well combined. Set aside for later use.
  4. Thread the chicken onto skewers: Place the marinated chicken cubes onto skewers, leaving small gaps between pieces for even heat circulation during cooking.
  5. Brush with sauce: Generously brush the chicken pieces with the prepared Bang Bang sauce to add flavor prior to cooking.
