Wet Ingredients

  • 1 cup milk
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, brown sugar, kosher salt, cinnamon, ground nutmeg, and ground ginger until well combined.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the milk and pumpkin puree. Then add the eggs and stir in the vanilla extract, mixing until smooth.
  3. Mix Batter: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a wooden spoon until just combined; be careful not to overmix to ensure fluffy pancakes.
  4. Heat Skillet: Melt butter in a large nonstick skillet over medium heat. Once the butter is foamy, reduce heat to medium-low to prevent burning while cooking the pancakes.
  5. Cook Pancakes: Ladle the pancake batter into the skillet. Cook until bubbles appear on the surface and the underside turns golden brown, about 3 minutes. Flip carefully and cook the other side until golden brown, about another 3 minutes.
  6. Repeat Cooking: Continue cooking with the remaining batter, adding more butter as needed to prevent sticking.
