  • 2 tbsp maple syrup
  • 1/4 tsp pumpkin pie spice
  • Pinch of kosher salt

To Serve

  • Maple syrup, for drizzling
  • Powdered sugar, for dusting

Instructions

  1. Prepare the custard mixture: In a shallow baking dish, whisk together the eggs, milk, pumpkin puree, vanilla extract, pumpkin pie spice, and a pinch of kosher salt until well combined.
  2. Soak the bread: Place the brioche slices into the pumpkin custard mixture, allowing them to soak for about 30 seconds on each side so that the bread absorbs the flavors but does not become too soggy.
  3. Cook the French toast: Heat 1 tablespoon of unsalted butter in a large nonstick skillet over medium-low heat. Add two soaked slices at a time and cook until golden brown, about 3 to 4 minutes per side. Remove and repeat with the remaining slices, adding more butter as needed.
