Ingredients

Brie Bites

  • Cooking spray, for the pan
  • 6 ounces brie cheese
  • 1 sheet frozen puff pastry, thawed in the refrigerator overnight
  • All-purpose flour, for rolling
  • 1 teaspoon finely chopped fresh rosemary, plus more rosemary leaves for garnish
  • ⅓ cup DeLallo Fig Spread
  • 2 tablespoons finely chopped toasted pecans

Instructions

  1. Prepare the muffin tin: Preheat your oven to 375°F (190°C) and lightly oil or spray a 24-cup mini muffin tin with cooking spray to prevent sticking.
  2. Cut and chill brie: Cut the brie cheese into 24 small pieces, about the size of a mini muffin cup. Place them in the refrigerator to chill until ready to use, which helps maintain their shape.
  3. Roll and cut puff pastry: On a lightly floured surface, spread out the thawed puff pastry sheet. Dust the top lightly with flour and roll it into an 11×13-inch rectangle. Cut this rectangle into 24 small squares by first slicing crosswise into 6 strips and then lengthwise into 4 strips, using a pizza cutter for precision.
  4. Form pastry cups: Gently separate each puff pastry square and press each one into a well of the mini muffin tin, ensuring the pastry covers the bottom and sides evenly. Press the sides together to form a small cup shape, making sure the pastry fits snugly.
  5. Add rosemary and brie: Sprinkle about one teaspoon of finely chopped fresh rosemary evenly into the bottom of each pastry cup. Then place one chilled piece of brie into each cup on top of the rosemary.
  6. Bake the bites: Bake in the preheated oven for 18 to 22 minutes, or until the puff pastry is golden brown, crisp, and the brie has melted beautifully.
  7. Cool and garnish: Remove the muffin tin from the oven and let the bites cool for about 2 minutes. Then, spread approximately ½ teaspoon of fig spread on each melted brie bite, sprinkle chopped toasted pecans on top, and garnish with fresh rosemary leaves.
