These Peanut Butter Protein Balls are a quick and nutritious no-bake snack that’s perfect for a protein-packed energy boost. Made with medjool dates, all-natural peanut butter, vanilla protein powder, and a hint of cinnamon and vanilla, these protein balls are easy to prepare and ideal for on-the-go snacking or a pre/post-workout treat.

Ingredients

Ingredients

  • 1 cup medjool dates (about 8 dates or 120 grams, pitted)
  • 1/2 cup all-natural peanut butter (128 grams)
  • 1 cup vanilla protein powder (100 grams)
  • 4-6 tablespoons milk (amount depends on dates’ juiciness)
  • 1 teaspoon vanilla bean paste
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Make the energy ball mixture: Add the medjool dates, peanut butter, 4 tablespoons of milk (adding more if necessary), vanilla protein powder, vanilla bean paste, cinnamon, and salt to a food processor. Process the mixture until it becomes smooth and the dates break down, forming a slightly crumbly but moist dough. Adjust the texture by adding more protein powder or rolled oats if too wet, or more milk if too dry.
  2. Form into balls: Using a small cookie scoop or tablespoon, portion out the mixture to form 15 equal-sized balls. Place the balls on a tray or plate and refrigerate for 15-30 minutes to chill and firm up.
  3. Enjoy: Once chilled, the peanut butter protein balls are ready to be enjoyed as a convenient, energy-boosting snack.

Notes

  • Ensure dates are pitted before use for easier processing.
  • You can substitute milk with any non-dairy milk for a dairy-free version.
  • Add rolled oats if the mixture is too wet to help bind it together better.
  • Store the protein balls in an airtight container in the fridge for up to one week.
  • These can also be frozen for longer storage; thaw before eating.
