Peanut Butter Potato Candy is a nostalgic, no-bake treat combining creamy mashed potatoes, buttery sweetness, and rich peanut butter rolled into a soft candy log. It’s a unique, melt-in-your-mouth confection perfect for satisfying sweet cravings with a smooth, peanut buttery center wrapped in a sweet, pliable dough.

Ingredients

Candy Dough

  • 1/2 cup plain mashed potatoes
  • 1/4 cup unsalted butter, softened
  • 6-7 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Filling

  • 1/2 cup creamy peanut butter

Instructions

  1. Mix Base Ingredients: In a large bowl, combine the mashed potatoes, softened unsalted butter, and 1 cup of powdered sugar. Using a hand mixer or stand mixer, beat until the mixture is smooth and combined.
  2. Add Powdered Sugar: Gradually add the remaining powdered sugar—1 cup at a time—mixing thoroughly after each addition. Continue adding until you have incorporated 6 cups total or until the mixture achieves a moldable consistency that can be rolled into a ball.
  3. Flavor the Dough: Stir in vanilla extract and salt evenly through the dough to enhance the flavor.
  4. Chill Dough: Divide the dough into two equal portions. Wrap one portion tightly in plastic wrap and refrigerate to keep it firm.
  5. Prepare Work Surface: Lightly dust a piece of parchment paper with powdered sugar to prevent sticking.
  6. Roll Out Dough: Shape one half of the dough into a rough rectangle and roll it out on the parchment paper to approximately 1/4 inch thickness, around 8 by 12 inches in size.
  7. Spread Peanut Butter: Evenly spread half of the creamy peanut butter over the rolled-out dough, leaving about a 1cm border around the edges for easier rolling.
  8. Roll the Dough: Starting from the long edge, carefully roll the dough into a tight log, pressing gently to adhere the layers.
  9. Slice the Candy: Using a sharp knife, cut the log into slices about 1/4 to 1/2 inch thick.
  10. Repeat Steps: Repeat the rolling, filling, and slicing process with the remaining dough and peanut butter.

Notes

  • The amount of powdered sugar can be adjusted to achieve a pliable dough; add more if too sticky.
  • Use plain mashed potatoes without seasoning or lumps for smooth texture.
  • Peanut butter spread thickness can be altered to taste or substituted with crunchy peanut butter for texture.
  • Store candy slices in an airtight container in the refrigerator for up to one week.
  • Allow candy slices to come to room temperature before serving for softer texture.
