This Peanut Butter Overnight Oats recipe is a simple, nutritious, and delicious make-ahead breakfast made with just five main ingredients. Creamy almond milk soaks gluten-free rolled oats overnight with chia seeds, natural peanut butter, and a touch of maple syrup, creating a ready-to-eat, hearty meal. Easily customizable with various toppings like fresh fruit, flaxseed, or granola, this recipe is perfect for a quick and wholesome start to your day.

Ingredients

Base Ingredients

  • 1/2 cup unsweetened plain almond milk (or substitute with other dairy-free milks such as coconut, soy, or hemp)
  • 3/4 Tbsp chia seeds
  • 2 Tbsp natural salted peanut butter or almond butter (creamy or crunchy; or substitute with other nut or seed butters)
  • 1 Tbsp maple syrup (or substitute with coconut sugar, organic brown sugar, or stevia to taste)
  • 1/2 cup gluten-free rolled oats (rolled oats preferred over steel cut or quick cooking oats)

Optional Toppings

  • Sliced banana, strawberries, or raspberries
  • Flaxseed meal or additional chia seeds
  • Granola

Instructions

  1. Combine Wet Ingredients: In a mason jar or small bowl with a lid, add the almond milk, chia seeds, peanut butter, and maple syrup. Stir gently with a spoon to combine; the peanut butter does not need to be fully mixed in, allowing delightful swirls to form overnight.
  2. Add Oats and Mix: Stir in the gluten-free rolled oats a few times to incorporate. Press down with a spoon to ensure all the oats are moistened and submerged in the almond milk mixture.
  3. Refrigerate Overnight: Securely cover the jar or bowl with a lid or seal and place it in the refrigerator for at least 6 hours or overnight to allow the oats and chia seeds to absorb the liquids and soften.
  4. Serve and Garnish: The next morning, open the jar and enjoy the oats cold or optionally heat them for 45-60 seconds in the microwave (leave space for expansion to avoid overflow). Alternatively, transfer to a saucepan and warm over medium heat. Add extra liquid if needed. Top with your choice of sliced fruit, flaxseed meal, chia seeds, or granola as desired.
  5. Storage Tips: Store leftover overnight oats in the refrigerator for up to 2-3 days, best consumed within 12-24 hours for optimal freshness. Not recommended to freeze.

  • Sweeteners can be adjusted or substituted with coconut sugar, organic brown sugar, or stevia.
  • Overnight oats can be enjoyed cold or warmed up as per preference.
  • Leave room in the container if microwaving to prevent spillage.
  • Overnight oats are best eaten fresh within 1-2 days but keep well up to 3 days refrigerated.
