Ingredients

Butter

  • 4 tablespoons (2 ounces) cold unsalted butter

Fruit Mixture

  • 2 pounds fresh peaches (about 4-6 ripe peaches)

  • 1/2 teaspoon ground cinnamon

Batter

  • 1/2 cup + 2 tablespoons all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup half and half
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Melt Butter: Preheat the oven to 350°F. While heating, slice the cold unsalted butter into 4 equal pieces and place them in an 8-inch square baking dish. Put the baking dish in the oven to melt the butter, ensuring it does not brown. Once melted, remove from the oven.
  2. Prepare Peaches: Peel the peaches either by using a sharp vegetable peeler or by blanching them in boiling water for 30 seconds, then plunging into an ice bath to loosen skins. Peel off the skins, halve the peaches, remove the pits, and slice each peach into 6-8 pieces.
  3. Mix Fruit Filling: In a bowl, combine the peach slices with 2 tablespoons of sugar, fresh lemon juice, and ground cinnamon. Stir gently and set aside to allow the flavors to meld.
  4. Prepare Batter: In another bowl, whisk together the all-purpose flour, remaining 6 tablespoons sugar, and baking powder. Gradually stir in the half and half and vanilla extract until a batter forms; small lumps are acceptable and will result in a tender crust.
  5. Assemble Cobbler: Spoon the batter over the melted butter in the baking dish carefully, do not stir it in. Then, evenly pour the peach and spice mixture on top of the batter.
