Ingredients

Fruit and Vegetables

  • 2 to 3 large ripe peaches
  • 1 handful cherry tomatoes, sliced
  • 1 handful basil leaves

Dairy

  • 1 to 2 balls burrata cheese (use 1 ball for 2 servings or 2 balls for 4 servings)

Others

  • Olive oil, for drizzling
  • Balsamic vinegar or balsamic reduction, for drizzling
  • Flaky sea salt (smoked if desired)
  • 1 handful pepitas, roasted or candied (optional)

Instructions

  1. Slice the peaches. Use up to 3 peaches for 4 servings; slice peaches evenly to provide a fresh base for the salad.
  2. Arrange peach slices and burrata. On a platter or individual plates, place the peach slices evenly. Break the burrata into chunks with your hands and scatter it over the peach slices, using 1 ball of burrata for 2 servings or 2 balls for 4 servings.
  3. Add tomatoes and basil. Top the salad with sliced cherry tomatoes and fresh basil leaves to add color and flavor contrast.
  4. Finish with dressing and seasoning. Drizzle olive oil and a small amount of balsamic vinegar or balsamic reduction over the salad. Sprinkle flaky sea salt to taste. Optionally, add roasted or candied pepitas for extra crunch and nuttiness.
