This Peach Bruschetta recipe offers a delightful blend of sweet and savory flavors, combining crispy baguette slices with a creamy goat and cream cheese mixture, fresh peach wedges, fragrant basil, and a touch of honey drizzle. Perfect as a refreshing appetizer or party snack, these bruschettas are easy to prepare and visually appealing.

Ingredients

Bread

  • 1 baguette, sliced diagonally into ½-inch thick slices
  • Olive oil for brushing bruschetta

Cheese Mixture

  • 4 oz goat cheese
  • 4 oz cream cheese
  • ¼ teaspoon salt
  • ¼ teaspoon cracked black pepper
  • 5 basil leaves, chopped (1/3 of total basil ribbons)

Toppings

  • 3 ripe peaches, sliced into wedges
  • 10 basil leaves, cut into ribbons (remaining)
  • Honey for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for toasting the baguette slices.
  2. Prepare Baguette Slices: Slice the baguette diagonally into ½-inch thick slices. Brush both sides of each slice with olive oil. Arrange them on a baking sheet and place in the oven for about 15 minutes or until crisp and golden. Alternatively, you can grill the slices on a BBQ. Once toasted, set aside to cool slightly.
  3. Make Cheese Mixture: In a bowl, combine the goat cheese and cream cheese. Warm the mixture gently in a microwave or toaster oven just until barely soft enough to mix easily. Stir with a fork until smooth. Add the chopped basil leaves (about one-third of the total basil ribbons), salt, and cracked pepper. Mix well and set aside.
  4. Assemble Bruschetta: Spread a spoonful of the cheese mixture onto each toasted baguette slice. Top each with a wedge of peach. Garnish with a few basil ribbons on top, then drizzle lightly with honey and sprinkle with additional cracked pepper to taste.
  5. Serve Warm: Serve the bruschettas while the cheese mixture is still slightly warm for the best flavor experience.
  6. Presentation: Arrange the bruschettas on a white platter or rustic cutting board for an elegant serving presentation.

Notes

  • You can infuse the honey with herbs like rosemary or thyme for extra flavor before drizzling.
  • If fresh peaches are not available, ripe nectarines can be used as a substitute.
  • For a vegan variation, substitute cheeses with plant-based alternatives and use agave syrup instead of honey.
  • Grilling the baguette slices adds a lovely smoky flavor if desired.
  • Serve immediately after assembly to maintain the crispness of the bread.
