A creamy and tangy Parmesan Vinaigrette that combines white wine vinegar, extra virgin olive oil, freshly grated Parmesan cheese, garlic, and Italian seasoning for a versatile dressing perfect for salads or drizzling over vegetables.

Ingredients

Vinaigrette Ingredients

  • 3 tablespoons white wine vinegar
  • 1/3 cup extra virgin olive oil
  • ½ cup Parmesan cheese, freshly grated
  • 2 cloves garlic, roughly chopped
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • 1 teaspoon honey

Instructions

  1. Combine Ingredients: Place white wine vinegar, extra virgin olive oil, freshly grated Parmesan cheese, roughly chopped garlic, Italian seasoning, red pepper flakes, kosher salt, cracked black pepper, and honey into a small food processor or blender.
  2. Blend Until Emulsified: Blend the ingredients on high speed until the mixture is smooth and fully emulsified, creating a creamy vinaigrette. Taste and adjust seasoning if desired by adding more salt, pepper, or red pepper flakes.
  3. Alternative Mixing Method: If you do not have a food processor or blender, whisk all ingredients together vigorously in a small bowl or shake in a mason jar until well combined and emulsified.
  4. Serve: The vinaigrette can be served chilled or at room temperature, perfect for salads or as a flavorful drizzle on roasted vegetables or grilled meats.

Notes

  • For best flavor, use freshly grated Parmesan cheese rather than pre-grated or powdered varieties.
  • Adjust the amount of honey to balance the acidity if preferred sweeter.
  • Store leftover vinaigrette in a sealed container in the refrigerator for up to 5 days; re-whisk or shake before serving.
  • Can be used as a marinade or dipping sauce in addition to salad dressing.
