Ingredients

Filling

  • 8 ounces feta cheese, crumbled
  • 2 tablespoons fresh chopped dill
  • 1 clove garlic, grated

Phyllo Rolls

  • 16-20 sheets frozen phyllo dough, thawed
  • 1 tablespoon extra virgin olive oil, plus more for brushing

Chili Honey Sauce

  • 1 tablespoon salted butter
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons chili flakes
  • 1/2 teaspoon cumin seed
  • 1/3 cup honey

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix the Filling: In a mixing bowl, combine the crumbled feta cheese, fresh chopped dill, and grated garlic until evenly incorporated.
  3. Prepare Olive Oil for Brushing: Pour about 1/4 cup of extra virgin olive oil into a small bowl for easy access when brushing the phyllo dough.
  4. Assemble the Phyllo Rolls: Lay one sheet of thawed phyllo dough on a clean surface and gently fold it in half crosswise. Using a brush, coat the edges lightly with olive oil. Place approximately 1 rounded tablespoon of the feta filling on the short end of the phyllo sheet. Roll it up burrito-style, folding in the sides to seal the filling inside. Position the roll seam-side down on the prepared baking sheet. Repeat the process for 12 to 16 rolls.
  5. Brush Rolls with Olive Oil: Once all rolls are assembled, brush their tops generously with olive oil to aid in browning and crisping during baking.
  6. Bake the Rolls: Place the baking sheet in the oven and bake for about 20 minutes, or until the rolls turn a beautiful golden brown and the phyllo is crisp.
  7. Prepare the Chili Honey Sauce: While the rolls are baking, melt the salted butter, 1 tablespoon olive oil, chili flakes, and cumin seeds together in a small skillet over medium heat. Cook for 1 to 2 minutes until fragrant, taking care not to burn the spices. Remove from heat and stir in the honey until well blended.
  8. Serve: Remove the rolls from the oven and serve them warm alongside the chili honey sauce for dipping or drizzling over the top, enhancing the savory and spicy-sweet flavor profile.

Notes

  • Handle phyllo dough gently as it is delicate and can tear easily; keep unused sheets covered with a damp cloth to prevent drying out.
  • Adjust chili flakes quantity based on desired heat level.
  • These rolls are best served fresh and warm for optimal crispness.
  • Can be made ahead and reheated in a hot oven for a few minutes to restore crispness.
  • Use salted butter in the chili honey sauce for balanced seasoning; unsalted butter can be used but may require additional salt.
