This hearty One-Pot Chili recipe combines ground beef, kidney beans, tomatoes, and a blend of spices to create a flavorful and comforting meal in just 30 minutes. Perfect for busy weeknights, this chili is simmered on the stovetop for a rich, deep flavor and served with classic toppings like shredded cheddar cheese and sour cream.

Ingredients

Main Ingredients

  • 1 1/2 lbs ground beef
  • 1 onion, diced
  • 4 cloves garlic, crushed
  • 2 cans kidney beans, drained and rinsed
  • 1 28-ounce can diced tomatoes
  • 1 6-ounce can tomato paste
  • 1 4.5-ounce can green chilies
  • 3 cups chicken broth (or water with 2 teaspoons chicken bouillon powder)

Spices

  • 2 Tbsp chili powder
  • 1/2 tsp salt
  • 2 tsp cumin
  • 1 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • 1 tsp hot sauce
  • 1 tsp sugar

Instructions

  1. Cook the Beef: In a large pot over medium heat, fry the ground beef until fully browned. Drain excess fat to ensure the chili is not greasy.
  2. Sauté Aromatics: Add the diced onion and crushed garlic to the cooked beef. Sauté for about 3-4 minutes until the onion becomes soft and fragrant.
  3. Add Spices and Ingredients: Stir in chili powder, salt, cumin, oregano, cayenne pepper, hot sauce, and sugar. Then add the drained kidney beans, green chilies, diced tomatoes, tomato paste, and chicken broth. Mix everything thoroughly.
  4. Simmer the Chili: Bring the mixture to a boil, then reduce the heat to medium-low. Let it simmer uncovered for 30 minutes, stirring occasionally to prevent sticking and allow flavors to develop.
  5. Serve: Ladle the chili into bowls and garnish with shredded cheddar cheese and sour cream. Serve warm alongside cornbread for a complete meal.

Notes

  • You can substitute chicken broth with vegetable broth for a different flavor or water with bouillon as described.
  • Adjust cayenne pepper and hot sauce to your preferred spice level.
  • For a thicker chili, cook uncovered for a longer time or add less broth.
  • Optional toppings include chopped green onions, jalapeños, or avocado slices.
