These No Bake Cheesecake Bites are a delightful and easy-to-make dessert featuring a creamy cheesecake filling nestled in mini fillo shells, topped with fresh raspberries and blueberries. Perfect for parties or quick treats, they require no baking and come together in just 20 minutes.

Ingredients

Cheesecake Filling

  • 3/4 cup heavy whipping cream
  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1/2 tbsp vanilla extract

Assembly

  • 30 mini-fillo shells
  • Raspberries and blueberries for garnish

Instructions

  1. Beat whipping cream: Using a mixer, beat the heavy whipping cream until stiff peaks form. Set aside carefully to keep the texture intact.
  2. Mix cream cheese mixture: In a separate bowl, combine the cream cheese, sugar, and vanilla extract. Mix thoroughly until the mixture is smooth and well blended.
  3. Fold in whipped cream: Gently fold the whipped cream into the cream cheese mixture to maintain the light and airy consistency of the filling.
  4. Fill fillo shells: Transfer the cream cheese filling into a decorating bag or piping bag, and carefully fill each of the 30 mini fillo shells with the mixture.
  5. Add garnish: Top each filled shell with fresh raspberries and blueberries to add color and a burst of fresh flavor.
  6. Refrigerate: Place the assembled cheesecake bites in the refrigerator and chill until ready to serve, allowing the filling to set slightly.

Notes

  • Ensure the heavy cream is cold for better whipping results.
  • Folding the whipped cream in gently prevents the filling from deflating.
  • Mini fillo shells can be found in specialty stores or pre-made frozen in the freezer section.
  • These bites are best served chilled and consume within 2 days for maximum freshness.
  • Feel free to experiment with different fresh fruit toppings like strawberries or kiwi.
