Instructions

  2. Blend Ingredients: Pour the strawberries and their syrupy juices into a large liquid measuring cup. Add the low-fat cottage cheese and 2% milk. Using an immersion blender, blend all ingredients until the mixture is completely smooth and creamy, ensuring all curds are well incorporated.
  3. Adjust Sweetness: Taste the blended mixture and add the optional extra tablespoon of sugar or monk fruit sweetener if desired. Stir thoroughly to combine any added sweetener evenly throughout the mixture.
  4. Freeze Mixture: Transfer the smooth mixture to a Ninja Creami pint container and securely place the lid on top. Set the container on a flat surface in your freezer and freeze for at least 24 hours to ensure it is fully solidified for processing.
  5. Prepare Ninja Creami: Remove the frozen pint from the freezer and take off the lid. Insert the pint into the outer bowl of the Ninja Creami machine, then secure the outer bowl lid firmly to prepare for processing.
  6. Process Ice Cream: Lock the outer bowl assembly into the Ninja Creami machine. Select and press the ‘Lite Ice Cream’ program button. Allow the cycle to run completely to churn the mixture into a creamy ice cream texture.
  7. Check and Adjust Texture: Remove the pint from the machine and check the ice cream’s texture. If it appears powdery or crumbly, place it back into the Ninja Creami and use the ‘Re-spin’ function. If it remains crumbly after the second spin, add one tablespoon of milk to the pint and run the ‘Re-spin’ cycle once more to achieve a smooth, creamy consistency.
