Monster Bark is a festive, colorful treat perfect for Halloween, combining layers of melted baking chocolate, caramel swirls, and vibrant green and orange melting chocolates. Topped with crunchy pretzels, M&Ms, candy eyeballs, and sprinkles, this easy-to-make bark offers a delightful combination of textures and flavors, ideal for sharing at parties or enjoying as a seasonal snack.

Ingredients

Chocolate Base

  • 16 oz semi-sweet or unsweetened baking chocolate, roughly chopped

Caramel Layer

  • ½ cup hard caramel candies

Colored Chocolate Layers

  • ¾ cup green melting chocolate
  • ¾ cup orange melting chocolate

Toppings

  • ½ cup M&M’s
  • ½ cup chopped pretzels (pumpkin spice, white chocolate, or yogurt covered)
  • ¼ cup Halloween-colored candy sprinkles
  • 2 Tbsp candy eyeballs

Instructions

  1. Prepare Baking Sheet: Line a rimmed baking sheet or two quarter baking sheets with parchment paper to prevent sticking. Set aside for later use.
  2. Melt Baking Chocolate: Add about one inch of water to a medium saucepan and bring to a low boil over medium heat. Reduce heat to a simmer. Place the roughly chopped baking chocolate into an oven-proof glass bowl and set it over the saucepan without touching the water (double boiler method). Whisk or fold the chocolate continuously until it melts completely and becomes smooth. Remove from heat once done.
  3. Pour Chocolate Base: Pour the melted baking chocolate onto the prepared parchment-lined baking sheet. Using a spatula, spread the chocolate into an even layer. Set aside to cool slightly so it starts to firm up but is still pliable.
  4. Melt and Swirl Caramel: In a heatproof bowl, microwave the hard caramel candies in short intervals until warm and smooth when whisked. With a spoon, drizzle the melted caramel over the still-soft chocolate layer in strips. Create decorative swirls or patterns using a fork by dragging through the caramel lines. Add as much caramel as desired. Set aside to cool slightly again.
  5. Prepare Colored Chocolate Layers: Place the green and orange melting chocolates separately into two heatproof bowls. Microwave each in 30 to 45-second intervals until softened and smooth when whisked or stirred.
  6. Pour Colored Chocolates: Pour the melted green and orange chocolates over the caramel and chocolate layers in any pattern you like, allowing the colors to mix and swirl freely for an artistic effect.
  7. Add Toppings: Sprinkle the Halloween-colored candy sprinkles, candy eyeballs, chopped pretzels, and M&M’s evenly over the top to add texture, color, and festive flair.
  8. Chill and Set: Place the baking sheet in the refrigerator for at least 30 minutes to allow the bark to fully harden. Once set, break or slice the bark into smaller pieces for serving.

  • You can use either semi-sweet or unsweetened baking chocolate depending on your preferred sweetness level.
  • Feel free to customize the toppings with your choice of candy, nuts, or sprinkles to suit your taste or occasion.
