Ingredients

Pasta

  • 12 ounces bucatini

Sauce

  • 6 ounces butter (salted)
  • 3 cloves garlic, minced
  • ¼ cup red miso paste
  • 1 cup reserved pasta water (from cooking pasta)
  • ¾ cup grated Parmesan cheese

Garnish (Optional)

  • Furikake or nori flakes

Instructions

  1. Boil Pasta: Bring a large pot of water to a boil and cook 12 ounces of bucatini according to package instructions until just al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.
  2. Prepare Sauce: In a large skillet over medium heat, melt 6 ounces of butter. Add the 3 cloves of minced garlic and cook for 1-2 minutes until fragrant and softened without browning. Stir in ¼ cup of red miso paste and gradually whisk in the reserved pasta water until the sauce is smooth and well combined.
  3. Toss Pasta: Add the drained bucatini to the skillet with the miso butter sauce. Sprinkle in ¾ cup of grated Parmesan cheese, then toss everything together thoroughly until the pasta is evenly coated with the sauce and cheese. Adjust seasoning if needed.
  4. Serve and Garnish: Plate the miso pasta immediately and garnish with furikake or nori flakes if desired to add an extra layer of umami and texture.

Notes

  • Reserve pasta water when draining pasta; its starch helps emulsify the sauce for a creamier texture.
  • You can substitute red miso with white miso for a milder flavor.
